Though a humble ingredient, ikan bilis or anchovies are packed with savoury flavours and are commonly used in Asian dishes, particularly in Malay cuisine.

High in calcium, ikan bilis are preserved by being salted in brine. It is recommended that you remove the head and entrails of the fish before cooking as they tend to be higher in cholesterol. You may also wish to rinse the ikan bilis beforehand to remove some of the salt content
